L’Russian salad is a cold dish traditional Russian, served primarily as a starter, consists of chunks of boiled vegetables (mostly potatoes) and mix with mayonnaise.
Ingredients
- 200 g of small peas,
- 150 g of green beans,
- 2 potatoes,
- 2 carrots,
- 1 small turnip,
- 100 g of mixed pickles,
- 100 g pickled onions,
- 2 tablespoons capers,

- 2 eggs, 2 cups of mayonnaise (see here),

Preparation
Peel the vegetables: shelled peas, sprouted beans and cut into pieces 1 cm in length; peeled turnip, potatoes and carrots, then cut into cubes.
Boil the vegetables separately in boiling salted water; potatoes put them to fire in cold water, scolandole still al dente.
Riunite vegetables in a container along with pickles, diced regular ones large, onions and capers; all seasoned with a little oil.
Prepare a mayonnaise and amalgamatene half with vegetables, will place into a container.
Cover with the rest of the sauce and garnish as desired with slices of boiled eggs and olives.
